1/2 cup of freshly squeezed lemon juice
1/2 cup sugar
1 teaspoon coarsely chopped fresh ginger
5 to 6 cups of chilled water
Ice cubes, lemon rind and mint leaves, to serve
Blend together the lemon juice, sugar and ginger till the sugar has dissolved completely. Stir in water, and serve in tall glasses with ice cubes and mint leaves.
