Am gonna delight you all sharing a wonderful chicken recipe from Malabari Muslim kitchen........... Take care you won't bite your fingers....!!!!
Ingredients
Full dressed chicken
Turmeric Powder - 3 tsp
Chilly Powder - 8 to 10tsps (May add more to make it more spicy)
Pepper Powder - 2tblsp
Coriander Powder - 8Tblsp
Garam masala / Chicken Masala - 4tblsp
Lemon Juice - 1 Lemon
Salt - To taste
Chopped onions - 8no.s
Chopped Tomato - 6no.s
Ginger and Garlic paste- 4tsp
Sliced potatoes and Carrots (Optional while baking) -2 or 3 in no.s
Boiled Eggs - 1 or 2 ( according to the cavity in chicken)
Curry leaves - For aroma and garnishing
Method
- Marinate the chicken with chilly powder, turmeric powder and lemon juice. Refrigerate it for 2hours. The chicken if lined with a sharp knife will give better results.
- The chicken was then fried in oil filled in a frying pan with one-third of oil.
- The sides should be turned every now and then to ensure better frying.
- The legs of the chicken could be tied with a kitchen twine.
- After frying it should be kept aside for getting filled.
- In another pan sute ginger garlic paste,chopped onions,tomato,curry leaves and all the masala powders mentioned above in a low flame.
- The boiled eggs could be added as such or after slicing.
- Thus, our filling is ready and it should be filled inside the cavity of the chicken and stitched up.
- The chicken could be then kept in oven at 250*C for 20minutes by keeping chicken breasts facing down in a greased baking tray.
- It could be supplemented with veggies on sides if necessary
- The tray should be sprinkled with oil.
- While baking care should be taken to turn the chicken to all sides so that it gets well baked.
- Meantime gravy is to be prepared by suting ginger garlic paste, chopped onions, tomatoes and all masalas available in our list.
- The gravy should be thick enough such that the no extra water is added to it, other than the juice of tomato added to it.
- The chicken which is baked is then topped with the gravy prepared and kept in oven again for the perfect blending of the gravy to the interiors of the chicken.
- Another 10- 15 minutes baking is required for the necessary masala to blend in.
- It could be decorated with onions chopped carrots along with curry leaves.
thats a hell lot of oil...better you go for the idea of baking it.. gives better flavor too...
